Im often asked what on earth do you eat for breakfast on a Paleo lifestyle if you can’t have toast and cereal???
There are many, many options and it all becomes much easier if you get past the notion of what is “normal” breakfast food and just see it as “A Meal”, this being a plate of food that meets all the components of a Paleo meal. Simply put a palm size piece of good quality protein, a bit of healthy fat and the rest of the plate is filled with veggies, the greener the better.
This is what I whipped up this morning which took me all of 20 minutes and used up all the left over veggies I had sitting in the fridge.
Heres how –
In a large frypan add some coconut oil and toss in all the veggies you wish to use up. I had mushrooms, shallots, cherry tomatoes, kale, rocket, basil leaves and the last of my roasted pumpkin. Cook on a medium heat for about 5mins
In the meantime whip up 4 eggs and half a cup of coconut milk, season well. I love to use essential oils in my cooking so I added a few drops of Basil and Oregano oil to the egg mix. Pour this into the frypan with the veggies.
Cook on the stovetop on low heat till the bottom begins to set then transfer the pan under the grill on a medium heat. This will finish off the cooking process. It will only take about another 5 minutes.
Then voila!!! its ready to go. Serve with a nice fresh side. I chose cucumber, avocado, cherry tomatoes and a big spoon of fermented veg. A seriously delicious, perfect Paleo meal. Eggs for protein, low carb veggies, avocado for the healthy fat and Fermented Veg for good gut health.
